Every cup of coffee carries the signature of its postharvest journey. From classic natural to wet-hulled, each processing step transforms the chemical and sensory composition of the coffee fruit, shaping the final expression in the cup. The result is a rich spectrum of flavors and aromas, from clean and floral to bold, fruity, and complex. This is where diversity begins, beyond origin alone.

Classic Natural

Whole ripe cherries are slowly dried under the sun with the outer skin and pulp intact, allowing sugars from the mucilage to infuse into the bean. This method produces fruity, full-bodied coffees with rich sweetness and complexity.

Anaerobic Natural

Ripe cherries are sealed in oxygen-free tanks before drying, encouraging specific microbial activity during fermentation. This controlled process often results in intense, funky, and layered flavor profiles with pronounced acidity and depth.

Vibrant Fruity Complex

Honey

After pulping to remove the outer skin and some pulp, the sticky mucilage remains on the parchment during drying. The result is a balanced cup with the clarity of washed coffee and the sweetness of natural, often with silky mouthfeel.

Balanced Smooth Velvety

Washed (Dry-hulled)

Cherries are pulped, fermented overnight to break down mucilage, and thoroughly washed before drying in parchment. This produces a clean, crisp profile with bright acidity and refined flavor notes.

Clean Bright Elegant

Wet-hulled

A unique traditional Indonesian method where parchment is removed while the bean still retains its moisture around 35%. It yields a heavy body, low acidity, and tea-like, herbal tones that are characteristic of the region.

Tea-Like Bold Spicy

Wet-hulled Co-fermentation

A contemporary twist on wet-hulling where pulped cherries undergo fermentation with added yeast and fruit/leaf extract. This infuses the beans with novel flavor compounds, resulting in exotic cups with unique aromatic complexity.
